When my son comes home from school he is always hungry. These cheese quesadillas are quick and so simple to make. If you have more time you could add diced tomato, avocado or corn. I serve these cheese quesadillas with salad or mixed raw vegetables.
2 Trader Joe’s handmade flour tortillas
Earth Balance soy free Buttery Spread
Daiya mozzarella style shreds
- Spread the soy free butter on one side of each tortilla
- Heat up the frying pan till hot
- Place one tortilla buttered side down on the hot pan and sprinkle with the mozzarella shreds. Place the other tortilla buttered side up on the top and press down firmly
- Cook each side for about 2 mins or until the tortillas are golden and slightly crispy
