As you may know, many pesto recipes often include pine nuts or walnuts as an integral ingredient. Following is a nut free pesto recipe that my family absolutely loves. It is based on a recipe by Giada De Laurentiis that I found on the Food Network website. I modified the recipe by removing the pine nuts, but I promise you you won’t miss the nuts. Nut Free Herb Pesto Recipe
1 packed cup fresh basil leaves
1/2 packed cup fresh Italian parsley leaves
1/2 packed cup fresh mint leaves
1/2 cup grated Parmesan
1 tablespoon anchovy paste
1/4 teaspoon freshly ground black pepper
1 clove garlic
1/2 cup extra-virgin olive oil
In a food processor, combine the basil, parsley, mint, Parmesan, anchovy paste, pepper and garlic. Pulse until chunky. With the machine running, gradually add the olive oil until the pesto is smooth.
